  • 4 cups cooked rotini pasta
  • 2 cups shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup red onion, finely chopped
  • 2 tbsp apple cider vinegar
  • 1 tbsp granulated sugar
  • Salt and pepper to taste

Instructions

  1. Cook Pasta:
    In a large pot, bring water to a boil. Cook rotini pasta according to package instructions. Drain and rinse with cold water.
  2. Steam Broccoli:
    While the pasta cooks, steam broccoli florets for 3–4 minutes until tender but still bright green. Drain and cool.
  3. Prepare Dressing:
    In a large mixing bowl, combine mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper. Stir well.
  4. Combine Ingredients:
    Add cooked pasta, broccoli, shredded cheddar cheese, and red onion to the dressing. Toss until evenly coated.
  5. Refrigerate:
    Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
